Song of Wheat: Rustic Country Bread Baking

During my bread making course, I will be teaching the participants to make an easy, slow process, country style yeast bread, with a crispy crust and moist and soft crumb. It will be for any one wanting to make a delicious homemade bread without a lot of effort. Healthy and possible even though you may be working full time.

Once you learn how easy this can be, you will always stun your friends and family with a beautiful fresh homemade bread. In the same course I will attempt to teach the participants about a more complex healthy sourdough bread. They will learn to make a sourdough starter, how to care for it and to make a healthy french ‘Pain de Campagne’ – Sourdough country bread. All the participants will, at the end of the course, leave with a sourdough starter (that I would have prepared for them beforehand) and two beautiful loaves of country bread, one with commercial yeast and one with homemade sourdough.

About The Instructor

I am Marietjie van Wyk, but people call me Meraai. I lived in France for eleven years and that is where I learned to appreciate good quality artisan bread. When I came back to South Africa, I was shocked to find that we call this fine flour cooked dough with an added list of ingredients in a plastic wrapping: ‘Bread’. I started making my own homemade bread for my family around the year 2002. In the beginning it was not near what we were used to in France, but it was a lot better than the bread in the shop. I became desperate to find the way to make an authentic French country loaf. I first learned to bake a yeast loaf by studying Hester’s book of bread written by Hester van der Walt. At first I was satisfied with the yeast loaf, (my sourdough starter and bread failed and I was despondent. It seemed too complicated) until I went back to France to remember the taste of crispy crust sourdough bread. I did a short course with Niel Joncker where I fell in love with his woodfired oven. I can confidently say it became my passion to bake wholesome perfect loaves of sourdough Country bread for my family, friends and the community of Swellendam. I sell a variety of breads including this healthy country sourdough bread at the local market of Swellendam and on private orders from people.
