Heidi is a free spirited, non-conformist individual who is never happy with mediocrity. She is constantly pushing the boundaries of her creativity. She has turned her love of baking, colour and design into a home industry baking meringue creations for orders and for the local craft market. She loves to meet new people and share her knowledge and expertise. She is also fun loving and will make this course as enjoyable as it is informative.

On the first day of this course you will learn some history and theory of meringues.
Starting with a basic French meringue which you will make yourself you will also see a demonstration of making a Swiss meringue. This can be converted into butter icing or used as a stable topping for a lemon meringue.
You will make a mini pavlova case which you will dress in some unusual ways in the afternoon.
The second day will be taken up with making Macaroons, making fillings for them, making Vegan meringue, piped 4 different ways, doing coloured piping and flavouring, and dressing the meringue individually. This day will be a combination of demonstration and participation.
